Sacher Torte

This is a specialty cake that is named after the Sacher Hotel located in Vienna in 1832. According to Sacher Hotel more than 360,000 tortes are produced annually. It is rich chocolate cake that is lightened using whipped egg whites. Ground hazelnuts are used to give flavor and moisture to the cake. Apricot Jam is sandwiched with two cake layers – this gives more moisture to the cake. A silky ganache is used as glaze to cover the cake.

Lemon Roulade

This is a lemon roulade – which is known as a swiss roll by the English and jelly roll by Americans. It is a light sponge is soaked with lemon syrup and has a layer of lemon buttercream, and red fruit compote. It is then rolled up and glazed with the silky ganache. It is garnished with blueberries.

Fresh Fruit Charlotte

This is a French cake that has a wall and bottom of ladyfinger sponge. Within in this cake there is interchanging layers of diplomat cream, berry compote and lemon cremeux. It is finished with diplomat cream. It is garnished with fresh fruit and apricot glaze.

Tiramisu

The term tiramisu can be defined as pick me up. This dessert is traced back to the Renaissance. Tiramisu is considered to be a favorite of a Venetian courtesans - due to the espresso filled dessert. The tiramisu has layers of white genoise (substitute for ladyfingers), and tiramisu cream. It has a coffee syrup and is garnished with cocoa powder and a chocolate band.

It is a three layer biscuit viennois cake that is sandwiched between individual layers of chocolate ganache and coffee buttercream. The cake layers are brushed with a coffee soaker and it is finished with glacage glaze.

The outer part of the cake is a biscuit jaconde, dacquoise bottom, lemon mousse with a blackberry insert in the middle. It is topped with a blackberry glaze and is garnished with dried lemon slices, mint and blackberries.

A Rubies Torte It is a 3 layered chocolate almond flour cake that has interchanging layers raspberry ganache and and a raspberry gelee. It is coated in cocoa gelee.

White Chocolate Mousse with Raspberries

Biscuit Jaconde (walls), Emmanuel sponge with frozen raspberries and pistachios (cake bottom), raspberry insert, between white chocolate mousse. It is finished with a raspberry gelee and garnished with fresh raspberries, mint and tempered white chocolate decor.
