Food is an identity! Our food map indicates who we are, where we come from, and what happened to us along the way. We have a first food memory always related to the people we ate with, the environment where we grew with. People live in the world all eat food, we all have souls, when we exchange the food that means we exchange the cultures, this is most important element that I have learned from this course. We need to understand people, understand where they live, what do they have, why do they eat them, what and why the cooking methods they use. Sharing people’s thoughts and knowledge is really meaningful to me. I appreciate this world cuisine learning opportunity!

Mango Lassi

Lassi (pronounced [ləsːi]) is a popular traditional dahi (yogurt)-based drink or regional name for buttermilk in Jammu, Himachal, Haryana and Punjab. Lassi is a blend of yogurt, water, spices and sometimes fruit. Namkeen (salty) lassi is similar to doogh, while sweet and mango lassis are like milkshakes. This Mango Lassi accompanied with Chingri Malai Kari, Matar Pullao and Masaledar Sem.

Shah Jahani Biryani -Lamb & Saffron

Basmati pulao rice is cooked with lamb, onion, coriander, almonds and 21 exotic spices and served with a cucumber yogurt sauce. This dish involved few advance preparations, like washing and soaking the rice, heating milk and soaking saffron, processing the onion garlic and ginger into paste, frying the onion slices, braising almonds, cashew and raisins, sealing the meat.

Champinones Al Ajillo – Mushrooms in Garlic Sauce

Spanish Garlic Mushrooms is a wonderful Tapas dish, often served as party food. It was tender, silky and smooth mouthfeel, the pepper flakes motivated appetite, the sweet from the dried sherry once it was softened, lemon juice add the sour taste. It is absolutely delicious!

Sweet scallop will fulfil your taste buds! The meat is translucent when raw, appearing from milky to pink when it cooked. Parsley gave the green colour of the sauce.

Hummus Chickpea Sesame Dip

It is such a nutrient-rich, time-honored side dish that isn’t often dolled up with other ingredients (at least not mixed in, though toppings can be abundant). Hummus with Pita bread accompany with olive oil and cayenne pepper. A moment for your taste buds challenge— mysteriously making its way into your mouth!

I call this dish ‘African sun’, lentil is round shape, normally it accompanies with flat bread is round as well, the stew pungent flavor gives hot feeling.There are many varieties of specialty lentils, but two are most common: Black beluga and Puy. Both varieties are about one-third of the size of brown or green lentils and have a rich, earthy flavor. What an interesting lentils world!

Valencia is a Spanish coastal city where this dish is particularly revered. This Paella features seafood, sausage and chicken. Saffron is the essential spice of the dish.

A spicy tomato sauce normally is used in Greek cuisine, it finished off with fresh herbs and salty feta cheese. The finishing product was great with the tender prawns, tasty tomato sauce, accompanied with some Pita bread.

What a delightful and delicious meat dish! Adding prunes as a great sweet agent balancing sweetness and sourness. Keeping the bones during simmering for best flavour — just place them on the bottom of the pot when braising and cooking as the same reason — and, rather than skimming the fat as it cooked.

Sorpotel (Goa) Pork Curry

This pork curry contribute to a thicker, richer mouthfeel in the stewing broth though. The pork loin chops or shoulder cut with some fat is preferable for this curry. Garam masala is commonly used as curry powder, the spices we mixed for this curry: cinnamon, mace, peppercorns, coriander seeds, cumin seeds, and cardamon. They were toasted in a pan to release their aromatic flavours, then grounded to a powder.

A sticky, sweet, buttery, flaky, nutty baklava is a dessert of the Middle East and Mediterranean, I find it has numerous variations depending on the country of origins. The nuts can be pistachio, walnuts, or almonds, or a combination ground nuts. The best part of it is covered in a sweet syrup.

Greek Salad (Elliniki Salata)

Such a delight salad! It will make you feeling super happy and healthy whole day. It is quite similar with Green salad, one major difference between the two, is that the traditional Greek salad doesn't have lettuce but dill. The key is Feta cheese, the creek cheese with a Protected Designation of Origin!
