This Western Chinese noodle is famous around the world by its unique flavor thanks to the sauce. The sauce is a combination of chili oil, sesame paste, sesame oil, soy sauces, sugar and especially szechuan pepper. Szechuan pepper adds a unique aroma to every Szechuan dish.

This popular dish tells a lot about Southern Chinese food. Southern Chinese cuisine flavor mostly sweet and salty. The flavor usually goes with garlic, soy sauce, five spices, hoisin sauce and sugar.

In Hinamatsuri, Japan, they serve this soup in a Doll festival. The soup is clear and light yet flavorful. The clam juice is flavored with light soy sauce and kombu. Kombu is a Japanese kelp from Laminariaceae family, it has a very unique aroma.

MAKI ROLLS

Maki means rolls in Japanese, it refers to any sushi that is rolled in nori except raw fish and meat. Sushi is what they call for vinegar rice. Sushi rice is a type of short grain rice, it has more starch than long grain rice. After cooked, sushi chefs will blow the rice to evaporate excess water while mixing rice with rice vinegar. Japanese cuisine is well known by these rolls, they reflect all the hard works from sushi chefs as they require a lot of details and technique.

Can’t talk about Southern Asian cuisine without mention about Thai. Thai cuisine is all about street food. Because of the busy life and a year-round warm weather, Thai people usually like to hang around the food vendors to buy food. Street foods in Thailand are fast, cheap and delicious. Pad Thai is one of the best Thai street foods, all the Thai flavors are inlcuded in one dish. Sweet and sour from tamarin sauce, spicy from red chilies, salty and fishy from fish sauce.
