This is my body of work from my North American cuisine class at Lasalle College Vancouver.
Spicy Crab soup w/ Crab puffs
Spicy crab soup is a dish that is commonly found in the Mid-Atlantic region of the United States, it has ingredients such as mirepoix, corn, green peas, lemon juice, crab meat, and potato. the crab puff mixture contained green onions, worcheshire sauce, flour, eggs, crab meat and cheddar cheese.
Curried peanut Soup w/ Scallions & Quails
This soup dish is a combination of creamy and spicy, the peanut butter is cooked down with onions, celery, stock and then combined with the spices such as cayenne, coriander, turmeric, cumin, and curry powder. this soup is common to the Southern region of the United States.
Crispy fried egg w/ country ham and red eye vinaigrette
This salad dish is one that is inspired from the southern region of the United States, and it contains a deep fried hard boiled egg, then sauteed & diced country ham is then mix in together with pickled mushrooms, red onions, and watercress.
Shrimp w/ pimento cheese grits
This dish is one that is inspired by the cuisine of the Southern United States, it consists of sauteed shrimp, with a shrimp sauce and grits combined with shredded cheese and roasted bell peppers.
Gazpacho w/ Twisted cheese Straw
This soup is a simple soup dish that requires the combination of bell peppers, onions, papaya, cucumber, shallots, garlic, sherry vinegar, tabasco, and lime juice. the twist is puff pastry cut lengthwise and sprinkled with parmesan and paprika. this dish is commonly found in the Floribbean region of North America.
Sauteed Duck Breast w/ Pine nuts & Honey
This dish is a simple sauteed duck breast, that is then cooked down with a sauce made with white wine, shallots, honey. the duck breast is plated and topped with toasted pine nuts and cilantro. this dish is common to the California region.
Lemon chess pie
This is a simple dessert paste that has a lemon pie filling that was made from ingredients such as egg, sugar, cornmeal, flour, lemon juice, and vanilla extract. The pie is inspired from the rocky mountain region of North America.
Kansas city Ribs w/ Steak fries
This dish is a popular across the North American region but it is commonly found within the central region of the United States. The pork ribs were slow cooked in a pan with beer and water. the fries were made from russet potatoes, the best potatoes for making fries.
Deep Fried fish w/ Remoulade
This is a dish that is from the southern region of the United States, and it requires fish fillets cut about the size of a finger then coated and fried and paired with a remoulade sauce.
Roasted beet & rhubarb salad
This is a simple salad dish that has roasted beets combined with pickled rhubarb, toasted spiced walnuts, and a yogurt dressing made with honey, pomegranate, cumin, paprika, and greek yogurt. This dish is a common dish that is to the Central region of the United States.
