CUL121 Intro to Baking

This portfolio consists of all the baked goods we did throughout the weeks.

Chocolate fudge brownies, conchas, and banana bread

Chocolate fudge brownies: A chocolatey flavoured brownie with a soft center. Conchas: A Mexican sweet bread topped with a crunchy topping. Banana bread: A quick loaf that is banana flavoured. Pecans are included as well.

Whole wheat loaf: A

Whole wheat loaf, chocolate cherry scones, and shortbread cookies

Whole wheat loaf: A loaf of bread that was made by combining all ingredients together at once to form the dough. This is the straight dough method. Chocolate cherry scones: A dry textured baked good that is slightly sweet with chocolate chips and dried cherries. Shortbread cookies: A traditional Scottish cookie that is buttery, crumbly, and sweet.

Baguettes, pecan pie, and chocolate spritz cookies

Baguette: This is a traditional French long bread. The crust is hard and crispy, while the center is soft. Pecan pie: A flaky pie dough that is filled with a cooked custard. Chocolate spritz cookie: A cookie that is piped to create its shape, and some raspberry jam is piped into the indented spot in the middle of the cookie.

Raisin bread: A brea

Raisin bread, soft yeast dinner rolls, chocolate cream pie, and oatmeal cookies

Raisin bread: A bread shaped with a swirl in the middle, consisting of cinnamon sugar and raisins. It is also topped with cinnamon sugar. Soft yeast dinner rolls: A simple dinner roll that is slightly salty, and shaped in single and double knots. Chocolate cream pie: A flaky pie dough that is filled with chocolate cream, and topped with Chantilly cream. Both filling and pie dough are baked/cooked fully before being combined. Oatmeal cookies: A simple oatmeal cookie with some raisins. They spread and their shape forms during the baking process.

Multigrain sourdough, cranberry sour cream scones, pecan sticky buns, and peanut butter sandies

Multigrain sourdough: A sour flavoured multigrain (flax and sunflower seeds) bread. Pecan sticky buns: A sticky bun that is topped with pecans and filled with cinnamon and pecans. Cranberry sour cream scones: A dry textured baked good that is slightly sour and sweet, because of cranberries and sour cream. Peanut butter sandies: A peanut butter cookie with a crisscross pattern on top. They have a sandy texture, and are shaped by hand.

Focaccia: An oily flatbread topped with cherry tomatoes and rosemary. Savoury Greek scones: A savoury scone that consists of fresh dill and yoghurt. Blueberry muffins: A sweet muffin that consists of blueberries. It is topped with streusel topping.

Brioche braid: A buttery sweet dough that is shaped by braiding it. Chocolate bread: A chocolate flavoured bread with chocolate chips inside. Morning glory muffins: A sweet muffin consisting of grated carrots, apples, raisins, and coconut shreds.
